How
is olive oil made?
Follow our short visit at the olive mill.
The process begins at the large receiving bins called tramoggia
where the olives have been deposited after being hand picked and transported
in the old style bags called "balle" or in modern plastic
containers. A conveyor
belt moves them along to the washing
station: which is the largest existing machine in Italy for the
removal of leaves and branches and cleaning of the olives.
The olives then slide down the scivolo
and are transported to the frangitore
where they are pressed by rotating hammers that are placed within
the internal part of a special grill. The gramola
works the olive paste
that has been obtained and then puts them through the centrifuge
process which separates the seed, water and oil found in the olives.
Finally, new
olive oil streams out of the separator
and is ready to be tasted and eaten immediately
